Irish Whiskey
The history of Irish whiskey is as old as that of whiskey itself. Whiskey is believed to have been originated from Ireland, where medieval monks learned to distillate from the Arabs, who used distillation for producing perfumes. The Irish whiskey is less smoky than most Scottish whiskey since the Irish generally do not smoke their barley. Additionally, the Irish practice triple distillation which further reduces the medicinal qualities of the whisky.
Irish whiskies by law have to be aged a minimum of three years and most are aged at least five years. The majority are aged in used bourbon oak barrels, although some are aged in sherry or port casks. Different proportions of malted barley, the amount of aging and the type of oak barrel used account for the major differences in the taste of Irish whiskies. |
